Ingredients

Scale
  • 6 cups fresh peaches, sliced (about 6–7 large peaches)
  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup packed light brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish or a deep-dish pie plate with butter or non-stick cooking spray. In a large mixing bowl, combine the sliced peaches, blackberries, granulated sugar, lemon juice, cornstarch, vanilla extract, and cinnamon. Gently toss the mixture until the fruit is evenly coated. Pour the fruit mixture into your prepared baking dish, spreading it out into an even layer.
  2. In a medium mixing bowl, whisk together the rolled oats, flour, brown sugar, chopped pecans, cinnamon, and salt. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your clean fingertips to work the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces remaining. Sprinkle this topping evenly over the fruit filling in the baking dish, making sure to cover the edges.
  3. Place the dish in the center of the oven and bake for 40 to 45 minutes. You will know it is done when the fruit juices are bubbling vigorously around the edges and the topping has turned a beautiful golden brown. If the topping browns too quickly, tent it loosely with aluminum foil for the last 10 minutes. Remove the crisp from the oven and let it cool on a wire rack for at least 15 minutes before serving. This allows the juices to thicken into a delicious syrup.
  4. Scoop generous portions of the warm crisp into bowls. For the best experience, top each serving with a large scoop of high-quality vanilla ice cream or a dollop of freshly whipped cream. The cold cream melting into the warm, crunchy topping creates a heavenly contrast that everyone will love.
